ICE CREAM BALLS




Ingredients

Vanilla icecream-1 cup
Chopped nuts-2 tbsp
White sesame-1/4 cup
Honey- 2 tbsp
Bread-5 slices
Cornflour-1 tbsp
Oil+ghee to fry

Method
Mix the icecream with nuts and set in fridge.

Dissolve cornflour with water to a solution.

Heat the ghee+oil.

Cut the edges of bread.
Keep some icecream in center and cover.

Dip the ball in cornflour solution and marinate in sesame.

Deep fry in oil with medium flame till golden brown.

Spread honey on fried balls and serve immediately.

Tips:sesame is rich in iron and good for health.
Instead of sesame crushed nuts or desicatted coconut can be marinated.

Other options for stuffing:

Can use chocolate icecream with chopped chocolates .
In case of pineapple icecream ,add chopped pineapples.
In case of strawberry icecream,add chopped strawberries.





KAJU GULAB

Ingredients
Vanilla icecream-1 cup
Gulkhand-1 tbsp
Fried cashew nuts-1 tsp
Fresh cherry-1

Method
Take the serving cup.
Put some icecream,put the gulkhand and remaining icecream on top.
Sprinkle nuts.
Garnish with cherry and serve.

APPLE SURPRISE

Ingredients
Apple-1
Dry fruits(cashew,raisins,badam,walnuts,etc)-50 gms
Dates-10
Maida-1/2 cup
Salt-a pinch
Sugar-2 tsp

Ghee+oil- to deep fry



Method
Dissolve maida,salt and sugar with water to bajji batter consistency.

Mix the finely chopped nuts with dates.

Cut the apple to circle slices.
The slices are again moulded (cut) to star,circle,etc shapes using mould or cutter.

Now take 2 pieces of stars and prepare a sandwitch stuffing the nuts and dates.

Dip the sandwitch in maida batter and deep fry in ghee+ oil.


Tips:always add 1 tbsp of ghee with oil while frying for sweets.





BREAD PIZZA

Ingredients

Multi cereals,grains bread-4 slices
Mozarolla cheese-1 pkt
Pizza sauce or tomato ketch up-4 tbsp
Butter-1 tbsp
Chopped garlic-1/2 tsp
Chopped onion,tomato,capsicum,mushroom,paneer,babycorn(optional)

Method

Cut the edges of bread and make round shape.
Slightly roast the bread with butter on both sides.

Sauté all the vegetables and garlic with little butter for 2 mts.

On the bread,apply sauce,sprinkle some grated cheese,spread the vegetables.
Again sprinkle some cheese .

Keep this bread pizza in microwave oven for 2 mts till the cheese melts.
In case of stove ,keep on tawa and close with lid.leave for 2 mts with LOWER flame.



SIMPLE BAJJI FOR KIDS

EGG

SPONGY EGG

INGREDIENTS

Egg-4
Chopped onion-1/2 cup
Chopped curryleaves and coriander leaves
Sambar powder-1/2 tsp
salt
oil
mustard seeds ,urad dal for seasoning

METHOD

Beat the egg with salt ,sambar powder and 1 tsp milk.

Season the items and saute the chopped onion,curryleaves and coriander leaves.
Let it cool and add in egg.

Take the seasoning laddle(talipu kuli-karandi),apply oil(1/2 tsp).
pour a laddle of egg mixture and spray oil on top.

Let it cook in low flame.
Turn the side and cook till golden brown.

The texture will be very soft in center and crispy golden brown on top.

VARIATION:Can add chopped semicooked vegetables,grated paneer,cheese and as per your choice.


VARIATION:With the same mixture,try to cover the kids by preparing EGG PANIYAARAM with the paniyara stone,EGG APPAM with the kadai.

CHAT VARITIES

Chutneys:

Sweet chutney:

Dates-100 gms
Jaggery-100 gms
Tamarind-lemon sized

Grind all together with water and strain it.

Green chutney:

Mint leaves-1/2 bundle
Green chilly-2
Tamarind or lemon extract-little
Salt

Grind all together.
Dissolve in water and strain it.


Curd chutney:
In thickcurd add salt,sugar and chilly powder(option).


PANI PURI

Ingredients

White rava(sooji)-1 cup
Maida-1/2 cup
Wheat flour-1/4 cup
Baking powder-1/4 tsp
Salt
Chill water


Method

Evenly mix the flours,rava,salt and baking powder.
Add water and make thick dough.
Close and keep for sometime.

Roll to small puri’s and fry in oil(medium flame) till golden brown.



PREPARATION:


Boil and mashed potato,cooked chenna and chopped onion ,coriander leaves is required.

While serving: make a hole in puri,keep some potato,chenna and all types of chutneys.Then sprinkle onion and coriander leaves on top.


BHEL PURI

Ingredients:

Puffed rice(pori,poha)-4 cups
Oma podi muruku-1/2 cup
Potato chips
Grated carrot,cucumber and onion-1/2 cup each
Chopped tomato-1(thick apple tomato)
Chilly powder,turmeric powder and salt-little
Sweet and mint chutney-little

Method

Mix all the ingredients together and serve immediately.




PAV BHAJI

Ingredients
Pav bun and butter

For masala:
Boiled vegetables(carrot,beans,peas,cauliflower)-1/2 cup
Boil and mashed potato-1/2 cup
Capsicum-1 small
Onion-2
Tomato-1
Ginger garlic paste-1 tsp
Jeera-1/4 tsp
Chilly powder-1/2 tsp
Salt
Turmeric powder
Pav bhaji masala powder-1 tsp
Lemon-1/2
Coriander leaves

Method

In oil or butter,add jeera and tiny chopped onion and sauté well.
Add ginger garlic paste and mix well.
Add tiny chopped tomato and sauté well.
Add chopped capsicum and sauté lightly.
Add all the powders and salt.
Mix once and add water.
Add all the vegetables,mashed potato and mix well.
Sprinkle coriander leaves and lemon extract.


Slit the pav bun and toast with butter.

Keep some masala inbetween bun and serve with some gravey.

MILKSHAKES

BASIC MILKSHAKE

Ingredients
Cold milk-1 cup
Vanilla Ice cream-1 laddle
Ice cubes-4
Vanilla essence-few drops
Honey or sugar-as per taste
Fresh cream-2 tsp(option)

Method
Blend all the ingredients with half the qty of icecream.
Whip lightly.

Pour in a glass and garnish with remaining icecream on top and sprinkle nuts.


VARIATIONS:

BANANA MILKSHAKE:Follow the same receipe but blend the banana first and next add other ingredients.

CHOCOLATE MILKSHAKE: Follow the same receipe,instead of sugar –add chocolate syrup(given in SQUASH SECTION).Use chocolate icecream and grated chocolate for toppings.

MANGO MILKSHAKE: Mango pulp is combined with milk,sugar,mango essence,mango or vanilla icecream

THE SAME RECEIPES CAN BE FOLLOW IN STRAWBERRY ,CHIKOO,PAPAYA AND THE FRUITS YOU LIKE.
CHANGE THE ESSENCE ACCORDING TO FRUITS.




DATES MILKSHAKE

Ingredients
Seedless dates-10
Milk-200 ml(boil and chilled)
Sugar-2 tsp(as per your taste)
Honey-1 tsp
Vanilla icecream-1 scoop
Crushed icecubes-few

Method
Soak the dates in little milk .
Grind the dates with milk to paste,add the remaining milk,sugar,honey,little icecream,crushed ice cubes and blend it.
Pour it in glass tumbler,add icecream to float on top,sprinkle little grated dates,nuts,etc you preferred. serve it chill.

NOTE:
This milkshake is good for kids,pregnant women and ofcourse to all in this summer.

SWEETS



1.SWEET BREAD BALLS

Ingredients

Wheat bread or milk bread-5
Palkova-1 cup
chopped dry fruits-2 tbsp
Ghee and oil to fry

Method

Mix palkova and dryfruits together.
Do balls.

Dip the bread in water and squeeze it.
keep the sweet ball in center and cover well.

Deep fry in oil+ghee till golden brown.

cut to half and serve.

OPTION: CAN USE SUGARLESS KHOYA INSTEAD OF KHOYA WITH SUGAR.

IF U USE BALLS WITH SUGARLESS KHOYA,DIP THE FRIED BALLS IN SUGAR SYRUP AND ARRANGE OUT WITH CHERRY ON TOP.


NOTE: THIS RECEIPE IS HEALTHY TO KIDS AS WE ADD BADAM,CASHEW AND ALL DRY FRUITS.



2.STUFFED DATES CHOCOLATE

Ingredients
Dates(whole)-20
Chocolate bar-1
Cashew nuts-10
Badam-15
Badam essence-2 drops
Sugar powder-2 tbsp
Ghee-2 tsp(option)

Method

In whole dates,take out the seeds and keep it for stuff-in.
Melt the chocolate by double boiling method.
Keep the nuts in the sun and coarsely powder it.


For stuff-in:
Mix powdered nuts,sugar powder,badam essence or if you preferred
In ghee roast the powdered nuts lightly for the raw smell goes off.
off the stove and add sugar powder,essence,mix it.


Now take some stuff-in, stuff inside the dates(seed area) and keep.
Dip all the stuffed dates in melted chocolate and arrange in a tray.
Keep in the freezer till it sets.

NOTE:
This item is very good for children because they won’t like to eat
Dates,but they eats chocolate.

This chocolate gives strength ,dates has iron,
Badam helps in brain improvement,cashew gives stamina.so each one can take one Chocolate a day.

DOUBLE BOILING METHOD:
TAKE WATER IN A PAN,BOIL IT.
KEEP THE BOWL WITH CHOCOLATE IN THE PAN WATER AND MIX TILL MELTS.


3.WHEAT LADDU

Ingredients

Dry fruits
Wheat flour-1 cup
Sugar powder-1 cup
Ghee-2 tsp
Hot ghee as per need
Elaichi and nutmeg powder-1/4 tsp

Method

Roast the flour with 2 tsp ghee till raw small goes.
Let it warm.

Add sugar powder,elaichi-nutmeg powder and finely chopped nuts.
Mix altogether.

Add hot ghee ,mix and make balls.


4.CHOCOLATE BURFI

Ingredients
Maida-1/2 cup
Milk powder-1/2 cup
Coco powder-1/4 to ½ cup
Ghee-1 cup
Sugar-1 cup

Method
On stove,dissolve sugar with water in a heavy bottom vessel.
Add all the powders and mix without lumps.
Add ghee little by little and stir well till rolling consistency.


Set in a ghee greased burfi tray.
cut and serve.


5.INSTANT PAAL PAYASAM

Ingredients

Broken rice-2 tbsp
Condensed milk-100 ml
Elaichi and saffron-1/4 tsp
Chopped nuts-1 tbsp

Method

Boil a cup of water and add rice.
Cook well.

Keep in sim and add all other ingredients.
Mix evenly and serve.

Note: broken rice-wash and dry the rice.
Just broke in mixie and keep.
You can make porridge for babies with this rice.
Since the condensed milk is made of more milk,it is very healthy for kids.

ADAI

WHEAT RAVA ADAI

Ingredients

soak:
Wheat rava-1 cup
Rice-3/4 cup
Urad dal-1/4 cup

Grind with:
curry leaves
Jeera-1/2 tsp
Pepper-1/2 tsp
Dry chilly-as per choice
Coriander leaves-1/2 cup


METHOD

Soak the rice,dal and rava seperately.

Grind all the ingredients together to a coarse batter.
Add salt.
Allow it to ferment for 2 hrs.
Make adai.

Option:can even add chopped onion to batter.


GREEN GRAM ADAI

Ingredients
Green gram-1 cup
Rice-1/2 cup
Ginger,dry chilly
salt
Curryleaves and coriander leaves

Method

Soak rice and dal.
Grind altogether to a coarse batter.
Make adai.

Option:can use raw rice to get crispy adai.

SPROUTS,HEALTHMIX

SATHUMAVVU(HEALTH MIX)

Ingredients

Each 100gms:

Boiled rice
Roasted dal(pottu kadalai)
Urad dal
Green gram or moongdal
Mace,millet(kambu,solam)
Corn
Soya
Barley
Peanuts

Each 50 gms:

Sago
Horse gram
Cashewnuts
Badam

Each 200 gms:

Raggi and samba wheat

Elaichi-25 gms

METHOD

To make sprouts,soak the grains for 8 hrs,drain well and keep for a night in hotbox.

Soak corn separately.
Soak uraddal,green gram,mace,millet,soya,horsegram,raagi and wheat.

Soak and make sprouts of above ingredients.
Then dry the sprouts in room temperature and dry roast in medium flame little by little.(till smell comes)
Dry roast the remaining ingredients too except elaichi.

Powder all together and store in air-tight container.

RECEIPE PREPARATION

GIVE IN MORNING:
PORRIDGE:
MIX 1 TBSP OF POWDER,SUGAR TO 1 CUP OF MILK AND DISOLVE.
KEEP ON STOVE AND BOIL FOR 2-5 MTS.

GIVE IN THE EVENING:

HEALTHY LADDU

HEALTH MIX(POWDER)-1 CUP
POWDERED SUGAR-1 CUP
GHEE-1/4 CUP(DEPENDS)

MIX THE POWDER AND SUGAR POWDER EVENLY.
HEAT THE GHEE AND ADD TO POWDER MIX,LITTLE BY LITTLE.
MAKE BALLS.


TIPS:
Why we are making sprouts?

When sprouting,it decreases carbohydrate and increases protein.


Moong sprouts is rich in iron and vitamin B.

Sprouts length should not exceed 1 cm.

Black uraddal is rich in bone strength.

Each item will differs in soaking time,for ex:rajma will takes 12 hrs soaking time,,some will take more time ,that depends on the hardness and even the climate also.

Growth will be faster in summer and in rainy days it takes more time to sprout.



We can also sprout in a cotton cloth:

Soak,drain water,spread on cloth evenly and tie it.(not tightly)
Cotton cloth will have small holes for the air circulation.

We can make soup,sweets,samoza,salad,sandwitch,gravey,stuff masal for idly,chappathi roll ,desserts and even with non-veg graveys.

The sprouts can be keep for a week in room temperature or store in box and keep inside fridge but use before leaf starts.

IN CASE OF GETTING SPROUTS FROM SHOP,SOAK IT IN GOODWATER FOR 10 MTS WITH TURMERIC POWDER AND SALT.

STRAIN AND USE.


SIMPLE AND HEALTHY RICES

DAL RICE

Ingredients

Rice-1 cup
Toor dal-1/4 cup
Sambar onion-1/2 cup
Tomato-1
Green chilly-2
Garlic- 5 flakes
Sambar powder-1 tsp
Salt
Oil

Method

Wash and Soak rice ,dal together with 3 cups of water.
Add salt, turmeric powder, sambar powder and boil it.

While boiling, on the other side season mustard seeds, curry leaves in a pan.
Add onion, garlic, green chilly and tomato and sauté lightly.

Add in the boiling rice, close cooker and leave whistles.


VARIATION:Instead of toor dal, chana dal or splitted moong dal can be used.
Can add vegetables and cook.
Can mix all dals in equal ratio and cook in the above method .
In moong dal rice , add crushed jeera(cumin seeds) and pepper powder for extra taste ,add while water is boiling.

COMBINATION:1. with the same receipe,add carrot,beans,potato,cabbage,bouble beans,capsicum ,lublub(avarai),red pumpkin -any of these veg is suitable with toordal.
2.with the same receipe,rice and moongdal can be cooked.
with moongdal,any one veg like snakegourd,ridgeguord,brinjal,cabbage or any greens are prefered.

note: cook these rices with little more water,it is easy to mash and feed even to 7 months baby.this rice is tasty and prefered from 6 months baby to adults.

for toddlers,season these rices with ghee or while feeding add ghee and feed.

plain curd is best combination for all of these rices.

THESE RICES CAN BE DONE WITH IN 10 MTS,SO THIS SINGLE RICE CONTAINS DAL AND VEGETABLE,SIMPLE TO COOK AND EASY TO EAT FOR KIDS.



2.MOONGDAL CABBAGE RICE

Ingredients
Rice-1 cup
Lightly roasted wholemoong (green gram)-1/4 cup
Cabbage-1/4 cup
Ginger garlic paste-1/2 tsp(option)
Chilly or sambar powder(if gg paste not used)
Salt
Small onion,tomato-1/4 cup
Oil

Method

Wash and soak rice and dal.

Season the items,add chilly,onion ,tomato,cabbage and mix well.
Add gg paste,salt.
Mix well and add 3 cups water.
Add rice and dal .
Sprinkle coriander leaves.
cook in cooker.

UPPUMA

1.RAVA AND SEMOLINA

Ingredients

Rava(white) and semolina-1 cup
water-2 1/2 cups
Green chilly,salt
Jeera-1/4 tsp
Roasted peanuts-2 tbsp
Grated carrot-1/4 to 1/2 cup
mustardseeds,uraddal,curryleaves and oil-for seasoning
Ghee-1 tsp

Method

Roast the rava and semia with ghee till smell comes.

In a kadai,season the items,add jeera,sliced small onion if prefered.

Add chilly,peanuts and carrot and saute 3/4th.

Add water,salt and boil it.

Add rava and semia,cook well.
sprinkle coriander leaves.


WHEAT RAVA UPPUMA

Ingredients

B.Rava-1 cup
water-3 cups
Green chilly,salt and drychilly
small onion-1/4 cup
Peas(fresh)-1/4 cup
Grated carrot-1/4 to 1/2 cup
mustardseeds,uraddal,curryleaves and oil-for seasoning
Ghee-1 tsp

Method

In a kadai,season the items,sliced small onion and saute.
Add chilly,peas and carrot and saute 3/4th.

Add water,salt and boil it.

Add rava and cook well.
Add ghee.
sprinkle coriander leaves.

KID'S FAVOURITE


This section contains simple and healthy food for the kids between 8 months to 5 years.
The spices and salt qty in food is moms choice,depends on each kid.
After 6 months all the foods can be give for kids with less fat.

Children will hesitate to intake vegetables.so I have given in the form of chutney,rice ,adai(to intake dal varieties),etc.
This blog contains vegetable chutney,fruits rice.

This blog also contains kid’s favourite receipes of panipuri,bhelpuri,Manchurians,pav bhaji,etc.


Note:each and everyday ,a child should intake any dal,vegetables,greens,fruits and liquids.
FOR EX: menu for a day can be
1. early morning-milk with some healthy powders.
2. break fast-idly or adai or veg uppuma
3. brunch-any juices or soups or banana
4. lunch-greens,sambar(or any dal)if breakfast is idly or uppuma

vegetable fried rice or any veg variety rice,if br fast is all-dal adai.

5. after a sleep in afternoon,give any sundals in evening.
6. and in night feed chappathi(fibred food)which helps for easy motion in next morning.the chappathi can be stuffed of dal or veg .

NOTE:DON’T GIVE MILK IN NIGHT FOR KID’S,FILL THEIR STOMACH WITH FOOD AND MAKE THEM TO SLEEP.(THE CHANCE OF PASSING URINE IN BED WILL BE STOPPED IN THIS CASE)

BRUSH THEIR TEETH IN NIGHT.

SOME KID’S HAVE THE HABIT OF DRINKING MILK IN MID-NIGHT,IN THAT CASE,GIVE SOME WATER AND MAKE THEM TO GOGGLE AND DRINK(PREVENT FROM TEETH SPOILING.)
