CHAT VARITIES

Chutneys:

Sweet chutney:

Dates-100 gms
Jaggery-100 gms
Tamarind-lemon sized

Grind all together with water and strain it.

Green chutney:

Mint leaves-1/2 bundle
Green chilly-2
Tamarind or lemon extract-little
Salt

Grind all together.
Dissolve in water and strain it.


Curd chutney:
In thickcurd add salt,sugar and chilly powder(option).


PANI PURI

Ingredients

White rava(sooji)-1 cup
Maida-1/2 cup
Wheat flour-1/4 cup
Baking powder-1/4 tsp
Salt
Chill water


Method

Evenly mix the flours,rava,salt and baking powder.
Add water and make thick dough.
Close and keep for sometime.

Roll to small puri’s and fry in oil(medium flame) till golden brown.



PREPARATION:


Boil and mashed potato,cooked chenna and chopped onion ,coriander leaves is required.

While serving: make a hole in puri,keep some potato,chenna and all types of chutneys.Then sprinkle onion and coriander leaves on top.


BHEL PURI

Ingredients:

Puffed rice(pori,poha)-4 cups
Oma podi muruku-1/2 cup
Potato chips
Grated carrot,cucumber and onion-1/2 cup each
Chopped tomato-1(thick apple tomato)
Chilly powder,turmeric powder and salt-little
Sweet and mint chutney-little

Method

Mix all the ingredients together and serve immediately.




PAV BHAJI

Ingredients
Pav bun and butter

For masala:
Boiled vegetables(carrot,beans,peas,cauliflower)-1/2 cup
Boil and mashed potato-1/2 cup
Capsicum-1 small
Onion-2
Tomato-1
Ginger garlic paste-1 tsp
Jeera-1/4 tsp
Chilly powder-1/2 tsp
Salt
Turmeric powder
Pav bhaji masala powder-1 tsp
Lemon-1/2
Coriander leaves

Method

In oil or butter,add jeera and tiny chopped onion and sauté well.
Add ginger garlic paste and mix well.
Add tiny chopped tomato and sauté well.
Add chopped capsicum and sauté lightly.
Add all the powders and salt.
Mix once and add water.
Add all the vegetables,mashed potato and mix well.
Sprinkle coriander leaves and lemon extract.


Slit the pav bun and toast with butter.

Keep some masala inbetween bun and serve with some gravey.
